I needed a cast iron enameled pan with straight sides that was not too big. I wanted to make frittata in it. I found this one while surfing Amazon Le Creuset. I couldn't find it in any stores. I knew it would be perfect. It also fits the same lid as a Dutch Oven I already owned. Since purchasing this pan, I have made beautiful frittata as well as traditional Tart Tetin.Last night I made a baked omelette in this pan, and it looked fantastic. I plan a quiche next. I know it is a tarte tatin pan, but it does so many many dishes beside a specialty tatin. It fits in my Breville Smart Oven, where I've cooked several casseroles to great acclaim (my husband loves one dish meals, thank heaven). It is the FLAME color, which seems to me to have great life and depth of color. And, it is my very first LeCreuset pan.....I see there are more in my future. With food, presentation is very important, and the tatin pan aces that to perfection.The handles on the pan are unique, very comfortable to hold, and make it easy to remove the pan from the oven. Of course, being cast iron covered with enamel, the pan can sit on a burner to create a sauce, and then filled with the main recipe, go straight into the oven to bake. After it is all over, the pan cleans up with hot soapy water. I know it says it can be washed in the dishwasher, but who wants to treat such an exquisite piece of art like an ordinary item?If you like to cook but need a boost to add joy to the effort, think about adding a pan like this to your repertoire.Made my first Tatin tonight. Turned out beautifully. The pan is easily managed for it's intended purpose. It's beautiful and easy to clean. I look forward to making many more recipes. I would have liked a blue pan but the cerise (cherry red) is pretty.This is a great pan. Try to follow Julia Childs’ recipe for tarte Tatin. As hot as the pan can get, dark caramelization is still an issue. Julia sprinkles the tart with powdered sugar and puts under the broiler to get that dark, crispy color.It’s very useful and easy to clean. Love it!I've been using this pan for about a year. I have induction cookers, and regrettably the marriage of this pan, a tarte tatin and an induction cooker is not a happy one. I've used this on several different cookers, such as the Max Burton 6200, and the heat distribution is not even enough to make a decent tarte tatin. The center of the pan will be hot while edges are much cooler, so it's impossible to get adequate caramelization.This is also a problem with browning things before you put them in the oven, although in this case, you can rotate the pieces and it works out ok.However, i've found this pan useful for many other tasks, particular in the oven, so I'm happy that I purchased it. And I want to stress this is not a problem with Le Creuset, it is true for all cast-iron cookware and induction cookers (at least in my experience).People who have gas stove tops may have quite a different opinion.I have not yet made a tarte in this dish, but turned out a beautiful non-soggy crusted quiche that my husband says is the best quiche I've yet to make for him. That's big news, considering he normally dislikes quiche! I recycled my non-stick quick release quiche pan and am so happy to add this to my growing Le Creuset collection.Well, I did have difficulty pulling off the Tart Tatin recipe that I acquired that insisted on using this specific pan. The apples stuck to the dish, even with following the recipe. I am going to continue modifying till the tart comes out perfect! That is a challenge I will gladly undertake! However, so I could justify the cost of this beauty I changed my focus, crustless quiche! This beautiful pan does make a wonderful crustless quiche! Easy to maneuver with those great handles. Definitely Le Creuset quality and it is beautiful!I bought the smaller, 25cm sized dish which is plenty big enough for a large family. I use this in my big green egg bbq, guests are amazed that tarte tatin can be made on a bbq, It’s also perfect for oven dishes such as pineapple upside down cake where the caramel sauce can be made on the hob directly in the dish before the fruit & sponge mix are added, plus it comes with a recipe book. Like all le creuset pans, it’s an investment piece that will give perfect results & years of service.This came quickly and is of excellent quality - did my first Tarte Tatin and it worked wonderfully. I could have used any shallow casserole dish of course but wouldn't maybe have got the same outer crispness that this gave.Le Creuset lots and pans are, in my humble opinion, about the best you can buy. Expensive, yes, but also easy to use, easy to clean, stylist and it just oozes quality.Nice touch here was the recipe book which gave some good ideas and having done the apple tart I can tell you it came out a treat! The style of this pan makes it very easy to cook and then flip it over. Looks lovely!We have a lot of fruit trees so I started to make Tarte Tatins using an old pan. Burned the caramel a couple of times. Treated myself to this Le Creuset pan as a birthday present. It is fantastic. I am delighted with it and know that I will be enjoying using it for years.I've just used this dish for the first time. I have other Tatin dishes but none comes up to the standard of this one, it is, simply, THE BEST there is. Usual Le Creuset standard of craftmanship which means this dish can be used for other cooking needs thus extending its' value. The larger handles are a bonus when turning out the Tatin which other tins lack. I wholeheartedly recommend this dish and wish I'd not waited so long before buying mine. I used about six dessert apples packed tightly but the number varies with size of fruit. Will be trying out other fruits as time goes on. A good alternative to cake I think.
